Pu-er tea is known for it’s medicinal benefits rather than the unique earthy flavour. The unique lack of astringency keeps the leaves from over-steeping and makes them ideal for long, low-maintenance infusions. Unlike green tea, the leaves are fully oxidized and stored for several months in rooms to dry naturally for long periods. The leaves can be either bried loose or presed into cakes. Pu-er improves with age, comparable to the fermentation process of wine. The dark flavours continue to get richer and more complex, and some are still drinkable at 50 years old.
